My Famous Stroganoff

As we are heading into the coziest season of the year, i’ve been so excited about making all my favorite warm soups, strews, and pasta dishes. Last week I was feeling like a pasta dish that was hearty but also felt fresh and so I decided to create my own take on ‘beef stroganoff’ and It was SO GOOD. My husband had four helpings and told me I needed to put this recipe on our weekly rotation.

I love this recipe because it feels so much fancier than your basic spaghetti recipe but It really does not take much longer to make. I’m all about simple, no-fuss recipes that are nourishing and delicious and this one is that. I hope you love it!

MY FAMOUS STROGANOFF

RECIPE:

-1lb ground beef

-2 cups diced shiitake mushrooms (any mushroom will do- I just like shiitake for their immune boosting benefits)

-1 onion, chopped

-3 Tbs butter

-3 cloves garlic, finely chopped

-1 1/2 cups beef bone broth

-1 Tbs Worcestershire sauce

-salt + pepper to taste

-1/4 cup flour of choice (I used gf flour)

-1 cup sour cream

-1 package egg noodles (I used Jovial foods gf egg noodles)

INSTRUCTIONS:

-Cook egg noodles per instructions on box

-Melt butter in skillet and add onion, cook until transulcent

-After onion is soft, add mushrooms, garlic, and salt and pepper

-Add in ground beef after mushrooms have softened. Brown the meat with everything inside the skillet

-Drain fat once meat is cooked

-Add in the broth, Worcestershire sauce and flour and stir until sauce thickens

-Let simmer for about 5 minutes then remove from heat and add in sour cream

-Stir in noodles & serve !

Nourishing Bone Broth Recipe

Hi friend! Today I wanted to share my go-to method to make bone broth because we have been living off of bone broth this week.

If you haven’t heard, my husband was in a mountain biking accident over the weekend and so he’s been at home resting and recovering all week.

Nursing my husband back to health has been no easy feat but I knew that making this nourishing bone broth was a necessity.

Making your own bone broth is SO much easier than store bought and much more nutritious. I use my bone broth in recipes and soups but mostly just save it for sipping because it is SO GOOD.

Bone broth is also extremely rich in vitamins and minerals. If you deal with any type of chronic health issue, consuming regular amounts of bone broth should be at the top of your wellness protocol.

I gave a loose recipe in this video but my recipe changes week by week depending on what vegetables I have in the fridge. You really can’t go wrong!

Shopping for Spring & Summer

Hello Hello!

How are you guys doing? It’s a lovely evening over here and i’m currently sipping tea, watching Fixer Upper, and shopping for spring/summer! Since i’m pregnant, my wardrobe has simplified in a huge way. i’m gravitating towards easy lounge sweats, comfortable & classic shoes, and simple silhouettes. My go-to outfits are either leggings and a classic oversized button up blouse, a long floral dress, or a sweat set paired with high-tops.

It’s easy while pregnant to not feel very stylish or put together and so i’m putting extra intention into getting dressed everyday in pieces that make me feel good. I’ve also been making every effort to be mindful of my purchases and only purchase new items that I know I will wear and love for years to come. I have put together a mood board of pieces I am looking into adding into my wardrobe this season and I thought I would share! None of these pieces are maternity but will work great throughout my pregnancy and after. Would love to know your thoughts! Are you shopping at all this season?
